Upgrade your meals with kimchi! It’s packed with gut-friendly probiotics formed during the fermentation process and acts as an anti-inflammatory ⚡️ Ingredients: 250g white rice, cooked (20 minutes) 200g kimchi, roughly chopped 100g peas 1 white onion, diced 1 tbsp soy 1 tbsp kimchi brine 3 large eggs Splash of oil Optional garnish: Sriracha + 1 spring onion, sliced + sesame seeds Method: Step 1: To a wok on low heat add a splash of oil along with the white onion Step 2: Once the onion has softened add the kimchi, peas and rice - allow these to cook for 5 minutes Step 3: Move the rice to the sides of the wok creating a well, add one egg and the kimchi brine to the centre mix together before allowing to sit for 20 seconds Step 4: Mix the rice into the scrambled egg and leave on low heat Step 5: Fry the remaining 2 eggs In a separate frying pan Step 6: Assemble the bowl starting with the kimchi, top with the fried egg and option drizzle of sriracha, spring onions and sesame seeds ? 2-3 servings ⏰ 30 minute meal ? tag @revivewithjess in your creations!
