GLOW RECIPE 2: MUSHROOM HASH WITH EGGS 


Welcome to my skin food must have series! Packed with easy, quick skin glowing recipes. 


Todays spotlight is on mushrooms! These beauties are rich in antioxidants & fibre, making them great for your skin


Ingredients:

2 medium potatoes, roughly diced

1 onion, diced

2 tbsp smoked paprika

4 garlic cloves 

2 chillies 

4 eggs, boiled

4 large tomatoes, diced

200g mushrooms, sliced


Method:

Step 1: In a frying pan on a low heat soften the onion in a pan for 2 minutes, then add the mushrooms. Allowing both to cook through together

Step 2: Once the mushrooms start to have a splash of colour add the potato. Leave these to fry off together for 5 minutes

Step 3: Add 1 tbsp smoked paprika, mix this in then add the tomatoes. Stir well!

Step 4: Once the tomatoes have softened add a splash of water, 1 tbsp smoked paprika, the chilli and garlic

Step 5: Mix and allow to sit for 10 minutes with a cover, on a low heat 

Step 6: Remove the lid, stir again making sure all the liquid has been soaked up!


Top tip: place your mushrooms near a window, in direct sunlight, for an extra boost of Vitamin D
